Soya Bean Curry

Ingredients
Soya Chunks    -    2cups(soaked in hot water,added some salt and drained)
Soya Bean    -    1cup boiled
Onions    -    2{big size)
Green Chillies    -    1(slit open)
curry Leaves    -    1sprig
Bay leaves    -    1
Cloves    -    3
Cardamom    -    2
Aniseed(Saunf)    -    1tsp
Curd    -    2tbsp
Garam Masala    -    1tsp
Tomatoes    -    3
Mint Leaves(Pudina)    -    1cup
Chilli Powder    -    1tsp
Coriander Powder    -    2tsp
Turmeric powdeer    -    1pinch
Salt    -    to taste
Oil    -    1ladle
Coriander leaves    -    to garnish

Method

Fry the onions and aniseed in 1tsp oil and grind them in mixer coarsely.
In a pan,add Oil and fry cinnamon,cardamom ,cloves  and curry leaves.
Add the ground Onion paste to it and saute well for few minutes.

Then add the Coriander powder,chilli powder,tumeric powder and adequate amount of salt. Saute the masala for 1minute.

Meantime grind the tomatoes and mint leaves together to paste and add this to the curry.
Mix garam masala with the curd and add this to the curry.
Saute well till oil separates from the curry.

After the masala gets sauted well add the soaked soya chunks.Mix well and then add the cooked soya beans.

Again stir well and add 1-2cups of water or according to the consistency required.

Let the curry boil well and finally garnish with coriander leaves

Soya bean Curry is a semi gravy and it goes beat with roti, bread, naan and chapati.
