South Indian Sambar

Ingredients:
Lady's finger  -250gm (optional radish or drumstick)
Onion  -  2
Green chillies  -  2
Toor Dal  -   1cup(cooked)
Tamarind   -  lemon-sized (concentrated in 400ml of water)
Curry leaves   -1sprig
Fenugreek seeds -1/2 tsp
Mustard   -  1tsp
Salt   -  to taste
Chill powder   -1 1/2tsp
Coriander powder  -3tsp
Turmeric powder -  1pinch
Asafoetida powder -  1pinch
Salt
Oil

Method:

Heat Oil in a flat bottomed vessel.add mustard seeds.After they splutter ,add fenugreek seeds and curry leaves.

Fry Onions and green chillies till they getsauted well and then add the lady's finger.Fry them well so that the vegetables are half cooked




Then add chilly powder,coriander powder,salt and turmeric powder and fry the masala for a minute.

Add the tamarind concentrate and dal together.leave it to boil for 10 minutes.then add the fenugreek powder and again keep boiling it for 1 minute.

Finally garnish it with coriander leaves

Sambar Goes well with Idly ,Dosa and Rice.It is a protein rich dish and good for the whole family.
