Vegetable Kurma

Ingredients
Potatoes       -      2
Peas         -      100gm
Carrot      -     2
Beans      -      50gm
Drumstick    -    1
Onions         -    1
Tomatoes     -    1
Green Chilli     -    4
Cinnamon   -   1piece
Cardamom   -  2pods
Cloves   -  4
Ginger & Garlic Paste -  2tsp
Curry Leaves     -     1sprig
Mint Leaves       -   1cup
Coriander leaves  - to garnish
Coconut          -    1cup
Coriander powder   -  3tsp
Turmeric Powder     -   1/2pinch
Salt      -    salt to taste
Oil       -    2ladles

Method
 
Heat oil in a flat bottomed vessel .Add cloves, cinnamon and cardamom.Let them splutter and then add the curry leaves

Saute chopped onions till they turn translucent and then add the slit geen chillies.

Add beans and saute them for 1minute.Then add the tomatoes and mint leaves .After sauting them well slowly add the other vegetables (peas,drumstick,potatoes and carrot)


After sauting them well add the coriander powder,turmeric powder,(red chilli powder is optional if you want it to be more spicy) and salt.Again fry the masala together with the cooked vegetables for a minute.


Then add 4 cups of water and let them boil nicely for 5-7 minutes.Later add the coconut paste and allow it to boil for 3-5 minutes.
(Tip:Don't add coconut paste in a high flame.Keep the flame in medium to get the real flavour of the kurma)

Finally garnish with coriander leaves and our hot kurma is ready.
It goes well with Chapatti , Rice and Idlis



This is a real healthy dish as it has all vegetables in it........
