Potato Sabji

Ingredients
Onions-2
Potatoes-4(boiled)
Green chillies-4
Ginger-1small piece chopped finely
Curry Leaves-1sprig
Tomatoes-2
Turmeric Powder-1/2pinch
Mustard Seeds-1 tsp
Gingelly Oil-1ladle
Salt-to taste



Method



Chop the onions, chillies, tomatoes and curry leaves.

Heat a flat bottomed vessel and pour 1 ladle of gingelly oil. Wait till the oil is hot and add the mustard seeds, followed by the chopped onions, chillies and curry leaves.


Stir the contents and add the chopped tomatoes, followed by the finely chopped ginger.



Add half a teaspoon of turmeric powder and some salt to taste.

Mash the boiled potatoes and add it.Then add 1 cup of water and let it boil for 5 minutes.



Simmer and add the finely chopped coriander leaves.



The dish is ready to serve ! Best served with Poori / Chappati.
