Ingredients:
Mutton -1kg
Cinnamon -1
Cardamom -2
Cloves -4
Fennel seeds -1/2 tsp
Bay Leaf -1
Garam masala powder -1tsp
Turmeric powder -1tsp
Chilli Powder -2 tsp
Curd -1cup
Salt -to taste
Ghee -1ladle
Oil -1 ladle
Spice Powder:
Pepper corns-5Fennel seeds-1 tsp
Cinnamon -1
Cardamom - 2
Cloves - 4
Roast the above ingredients and grind it to powder
Paste:
Onions - 1(big)choppedOil -1tsp
Ginger and garlic Paste -1 tsp(Garlic is Optional)
Marinate the mutton with ginger garlic paste,garam masala poder,salt and turmeric powder and keep it aside for 1 hour.
Then in a pressure cooker heat oil and ghee.Then add cloves,cinnamon,cardamom,bayleaf and fennel seeds
Fry the marinated mutton in the oil nicely till it the oil separates from the mutton.Mutton should get fried nicely and turn reddish brown
(If there is too much of water, drain it to be used finally when we pressure cook the mutton)
Then add the ginger garlic paste and onion paste.Again fry them nicely together with the mutton.Then add the spice powder,chilli piowder and turmeric powder.
Then add 3 cups of water and Pressure cook it for 30-40 minutes.
Hot Mutton Rogan Josh is ready which can be served with Bread, Rotis and Naan
