Ingredients
Fish(Red Snapper) - 10pcs
Ginger - 1(finely chopped)
Shallots(small onions) - 15
Tomato - 2
Tamrind soaked in water - 3cups
Curry leaves - 1sprig
Green chillies - 2(slit lengthwise)
Chilli Powder - 2tbsps
Salt - to taste
Turmeric Powder - 1pinch
Coriander Powder - 1tbsp
Coconut Oil - 1ladle
Masala paste
Coconut - 1cup
Ginger - 1inch piece
Grind the coconut and ginger together as a paste and keep it aside.
Method
Mix concentrated tamarind with green chillies,curry leaves,tomato paste,salt,coriander powder,chilli powder and turmeric powder.
Boil the mixture nicely till it thickens,say for about 10 minutes.
Then simmer the stove and add the fish one by one slowly.Close the lid and keep it in medium flame.Cooking time depends according to the type of fish.For me it took just 4minutes.
Then finally add the coconut masala paste.Keep the flame on medium and cook for 2more minutes
Tip:Don't always stir the curry as the fish may break.
Meanwhile in another stove, heat Coconut oil and splutter curry leaves and saute the chopped shallots till golden brown.This adds a typical Kerala flavour to the dish.
Top this on the fish curry and immediately close the lid.After 2 minutes open the lid and mix the tempering with the curry.
Tasty Coconut Fish Curry is ready to be served with hot rice
