Ingredients(Serves 8)
Basmati rice - 4glass
Mutton - 1kg
Coconut Milk - 1glass
Onions - 6(sliced lengthwise)
Tomatoes - 5(finely chopped)
Mint Leaves(Pudina) - 1cup
Green Chillies - 5(slit lengthwise)
Ginger Garlic paste - 3tbsps
Coriander Powder - 4tsps
Chilli Powder - 1/2tbsp
Turmeric Powder - 1pinch
Salt - to taste
Ghee - 1ladle
Oil - 1ladle
Cinnamon - 2sticks
Cloves - 4
Bayleaf - 1leaf
Cardamom - 2
Method
Wash and soak the rice for 15minutes.Then add ghee to a pan and put the rice into it and fry for few minutes,so that the rice doesn't stick to each other when cooked.
In a cooker heat oil and fry cardamom ,cloves ,cinnamon and bay leaf,Then add the Onions and green chillies and fry for 1minute
Then add the ginger garlic paste and again fry it for 1 minute
Then add the mutton pieces and allow it to cook for 15minutes.
When the mutton pieces are almost cooked add chilli powder,coriander powder,turmeric powder and salt.
Then add the chopped tomatoes and mint leaves and saute it well for 10minutes
Meanwhile boil water for about 6 glasses.
Add in the boiled water and then 1 glass of coconut milk into the mixture.(try to taste at this stage to check the salt content).When the water boils add the rice.
Close it with a lid tightly and cook it for 10-15minutes on a simmer flame.(Inbetween open the lid and check to see if there is enough water,else it will get burnt at the bottom)
Tasty biryani is ready to be served ,Boiled egg and Onion raita are best accompaniments.
