Caramel

Ingredients
Sugar    -    2cups

Method
In a saucepan add the granulated sugar and heat the pan in simmer flame.

Slowly the sugar melts and turns slightly brown

Stir on so the heat spreads evenly.Make sure  you don't burn the sugar

 Sugar turns into caramel.Only when it is hot ,it will be in a molten form ,when you cool it becomes a hard candy.
The caramel that is prepared can be used to prepare Caramel Custard and caramel puddings.
If u add water to the hot Caramel ,you get caramel sauce which can be used to prepare sweet delicacies

Masala Tapioca (Kappa Puzhungiadhu)

Ingredients
Tapioca    -    1kg
Salt    -    to taste
Grated Coconut    -    1/2cup

For the masala:
Onions    -    1(finely chopped lengthwise)
Chilli powder    -    2tsps
Salt    -    1tsp
Coconut oil    -    2tsps

Method
Peel the skin of the tapioca and it into big chunks

Cook the tapioca in a open vessel well immersed in water and add salt to taste.

Cook for 15-20mins and strain off the remaining water.Our taipoco is ready.

Now to preapare the masala,mix the finely chopped onions with salt ,chilli powder and coconut oil.

Tapioca can be had with the prepared without any garnishing

For more taste you can also garnish with grated coconut.

This is a very simple tasty dish  and very easy to be prepared at snack time.

Mutton Biryani

Ingredients(Serves 8)
 Basmati rice    -    4glass
Mutton    -    1kg
Coconut Milk    -    1glass
Onions    -    6(sliced lengthwise)
Tomatoes    -    5(finely chopped)
Mint Leaves(Pudina)    -    1cup
Green Chillies    -    5(slit lengthwise)
Ginger Garlic paste    -    3tbsps
Coriander Powder    -    4tsps
Chilli Powder    -    1/2tbsp
Turmeric Powder    -    1pinch
Salt     -    to taste
Ghee    -    1ladle
Oil    -    1ladle
Cinnamon    -    2sticks
Cloves    -    4
Bayleaf    -    1leaf
Cardamom    -    2

Method
Wash and soak the rice for 15minutes.Then add ghee to a pan and put the rice into it and fry for few minutes,so that the rice doesn't stick to each other when cooked.

In a cooker heat oil and fry cardamom ,cloves ,cinnamon and bay leaf,Then add the Onions and green chillies and fry for  1minute

Then add the ginger garlic paste and again fry it for 1 minute

Then add the mutton pieces and allow it to cook for 15minutes.

When the mutton pieces are almost cooked add chilli powder,coriander powder,turmeric powder and salt.

Then add the chopped tomatoes and mint leaves and saute it well for 10minutes
Meanwhile boil water for about 6 glasses.
Add in the boiled water and then 1 glass of coconut milk into the mixture.(try to taste at this stage to check the salt content).When the water boils add the rice.
Close it with a lid tightly and cook it for 10-15minutes on a simmer flame.(Inbetween open the lid and check to see if there is enough water,else it will get burnt at the bottom)

Tasty biryani is ready to be served ,Boiled egg and Onion raita are best accompaniments.

Lemony Mint Juice

Ingredients
Lemon    -    1/2
Mint leaves    -    1 tsp crushed
Ginger    -    1/2 tsp crushed
Sugar    -    1tbsp
Method
Mix lemon juice with crushed mint and ginger.Add sugar to this.Mix 1 glass of cold water and blend nicely

Then strain the juice into a glass.Top it with mint leaves and ice cubes

Lemony Mint juice is a refreshing drink !
